Great selection of HD gear, by-the-way!
At the LEAST, you do have Three "issues" . . .
One - goggle / search Richard's discovery of :
DIGITAL MILLENNIUM COPYRIGHT ACT - 1998 . . . or
Digital Rights Management - a.k.a. - DRM . . . Do Not Copy . . . etc..
Two - Never use Composite Cabling w/ digital . . . . these ARE far better . . . . http://www.monoprice.com/products/produ ... 1&format=2
Three - that outstanding S.A. 8300HD S.T.B. must accomplish all recording - - - THEN, you may only "DO" a downloading or transfering of a previously-recorded selection { in real time } while sleeping from it to your other unit "IF" there are NO "embedded or inhibit bits " { a.k.a. - do not copy } included. This activity also stops any HD recording of new programming whilst all this is on-going, you might like to know. Sometimes, there IS also a reduction of available audio volume and reduced, not at HD definition.
Lastly, these disks may not initilize / play back on anything else other than your own unit ?
A FAR better / more satisfactory project WILL be the application of a terabyte external hard drive & totally-stop any use of the dvd disc recording . . . that S.A. 8300HD does have provisions for this.
ALL will remain in "HD" plus that Dolby Audio will be saved in tact.
Private, personal, permanent recording on dvd discs of DTV IS Gone / Done / Over !

I will take a look at the issues you mentioned. And while that provides a plausible explanation, what still has me confused is this:
Why would my current configuration allow me to DVD Burn a TV show I have saved to my HD BOX - with no problem - if my TV is on BUT this same configuration gives my 10 min of darkness (then fine Burn) if I turn my TV off?
If it is a DRM type issue, I would think that I couldn't Burn irrespective of whether my TV is ON or OFF. I know there have been times that I have gotten a message that a particular show can't be copied and I accept those cases and instead will BURN to my cheap PYE DVD BURNER that ignores all of the embedded security block features. (For example I BURNED the entire saved season of the Sopranos using my PYE).
My current "work around" solution is I put my TV on - start the BURN of the BOX saved show - Leave my TV on BUT set my TV to "sleep" so that it turns off when about when the show has completed playing. Functional success but a waste of energy (TV ON).
I especially liked you thought concerning using the Composite with an HD BOX that outputs a Digitial signal. Might be something there that I can tweak.

Since there IS no issue of using a surround sound or Blu Ray Player set up { yet } - - -
I would suggest only using that Component Cable set I linked previously on ALL the connections . . .may/may not not solve the mysterious ( 10 minute ) puzzle, however.
grasping at straws perhaps - but - although it doesn't make sense to always be precisely 10 minutes, those " HDMI Handshakes " are avoided by elimination of that sort of cable & instead, proper, quality, RCA Component Cabling is applied.
DO remember to re-consider at the time of any Blu Ray Player or Game Console, O.K.? These MUST use only certified, 1.3 HDMIs - absolutely!
Your "sleep setting" IS very ingenious ! And, lest you "worry" needlessly about using up the expected lifetime of that great HDTV, these all are considered to be useful for approx 50,000 - 60,000 viewing hours . . . . some plasma sets actually claim a 100,000 hours to their "half-life" - in fact !
Same as with a fluorescent lamp, just set the audio on 'mute' and leave that Sony on - at least as opposed to any frequent, repetitive " on / off " cycling . . . . those associated surges or inrushing of electrical power are far worse than just leaving one "ON!"

I suspect this is simply a bug in the cable box firmware related to the HDMI handshake/processing. If you could avoid the HDMI connection altogether (as Eli suggested) this should take care of it.
